Why not file suit to push the collection?  If (when) she in good faith pays, you can drop the

suit.   The small filing fee and process service cost may put you ahead of others in the collection process.    IMHO,  the "friendship would be over the minute she didn't pay me.

Remember, you run a business and I'm sure it's not a bank.
