Far be it from me to tell anyone how to run their business, but I know that as a consumer, I am sometimes asked to pay in advance, for example at gas stations or at McDonald's drive-thru. I don't see a difference.
Of course, one should exercise some discretion. If we're only talking one or two orders, I may go out on a limb, but three, four or more is pushing it. If they don't want to pay up front, I tell them no thanks and best of luck, no harm, no foul. I always welcome new customers, but I refuse beg for work. I'm able to be more selective because my clientele is the best in the business. They are extremely loyal and always keep me plenty busy.
