You are all bringing back tons of memories of holidays and the "back east" traditions! Trout fishing is almost nonexistent here in MN - walleye is the big fish out here (kinda similar to trout in consistency, but not taste). When I lived in NY, I had a cabin in the Adirondacks just west of Ticonderoga. Our back boundary line was the Schroon river and the NY DEC used to stock it with trout in the spring. My ex and the children used to out and catch trout, clean it and I would cook it on the grill with garlic and butter. Best fish!
As for Wassail - haven't had that since I was in highschool - my sweetheart's parents were English. Fond memories!
BTW, Kevin, although you aren't doing the "traditional" Thanksgiving with the bird - aren't you making candied sweet potatoes? I have a great and easy recipe for that as well (my Mom's).
