The only problem with putting a cap out of 15 pages is that you then have to return to the county. Not always, but when that happens that can be a real pain in the you know what. Thankfully 2 out of 3 of our states have mostly lower copy cost rates.
We do both flat fee pricing and with copy pricing depending on the client. It can be a hassle to negotiate but more times than not it comes out win/win and we take on the client.
We do a profit/loss sheet monthly and review where we are at with our clients to make sure we aren't missing anything. Additionally, we take on each new client on a trial basis, in case the pricing or what have you is simple unworkable. I haven't had to drop anyone in quite some time fortunately. Of course we put all agreements in writing and properly log values, etc.
