I'm curious about how software is selected for closing documents.

Last night I provided a notary service for a refinance. Husband is borrower, wife is not. There were two individual Truth and Lending statements: 2 copies, each with a spouse's name. Same with the Right to Cancel, Itemization of Amount Financed and others. In addition to printing on 8-1/2 x 14 paper  (and Legal was selected via the printer), the font looks to be 10 pt. or less.

HUD was 5 pages. Second page was blank except for the words: Page 2 of 5. Page 5 only contains signature information for borrower and settlement agent.

This adds up to a lot of extra papers shuffled around and more expensive sending between parties.  Again, I'm just curious.
