If she can't make a lump sum payment in full, and she wants to settle the case tell her to stipulate to judgment in the agreed amount of settlement. If she wants to make payments on the settlement rather than a lump sum payment build the payment schedule into the stipulation with the proviso that if she misses a payment the outstanding balance becomes immediately due and payable. This is an acceleration clause. Without it you would only be able to enforce each payment as it became due.

After the stipulated judgment becomes a matter of court record, and within the time permitted by statute following judgment... file a judgment lien to make yourself a secured creditor. If she misses a payment and the acceleration clause in the stipulation becomes effective...employ the collection procedures provided by statute in your state.

Don't back off on the trial date. Keep the pressure on. Has she offered you anything in return for continuing the trial date?
